Surprising with new main dishes

Jennifer Meriño, a lover of good cuisine, brings us this delicious recipe using one of the tastiest cuts of sturgeon: the C-Cut. This recipe uses daily life ingredients that everyone is likely to have at hand, which makes this a dish that is very easy to prepare.

Ingredients
  • 1kg Sturgeon Fillet (C-Cut)
  • 35g capers
  • 35g black olives with no stones
  • 10g parsley
  • 5g dried oregano
  • 500g yellow lemon
  • 100ml extra virgin olive oil
  • 15g salt
  • 7g black pepper
  • 250g cherry tomatoes

Preparation of the C-Cut Sturgeon

  1. Season the sturgeon fillet with salt and pepper to taste and place on an oven dish.
  2. Cut the cherry tomatoes and olives into quarters, and the lemons in half.
  3. Mix the olive oil with the cherry tomatoes, olives, capers, oregano, and parsley in a bowl. Pour this mixture over the fish.
  4. On a frying pan caramelise the lemons with the cut part facing down so they acquire a nice colour.
  5. Place the caramelised lemons around the fish.
  6. Cook the fish on a pre-heated oven at 160°C for 30 minutes.
  7. Serve placing the oven dish on the table.
